How do people play the sequence

We play it as about 18-19 with 6+♠.
Do you have any specific suit quality requirements (♠)?
Do you allow 6331 , or only 6322 is ok?
When would you prefer to rebid 3m in a 3 card suit?

I play it as running major and a side stop.

I thought it was more like 20-(not 2♣), balanced with side cards and solid or semisolid spades. I'd expect 6322 rather than 6331 shape, maybe 5332 too depending on your 2NT style.
With more spades and similar values, I'd bid 4♠. With less strength (like 18-19 as you suggest), I'd bid 2N with 5332 and 3♠ with 6+ spades.
In the same way the normal 18-19 balanced hand only rebids 2N (and not 3N) lest it get too high, I think committing to game on similar values isn't generally advisable. This is why many reserve the 3N and 4♠ rebids for quite strong hands (20+ or similar playing strength).

Running 6 or 7 card major, some stuff on the outside (if a singleton, it's in a minor), choice of games.
